CENTURY OLD CAKE RECIPES
CITRON CAKE
1 cupful of butter, 2 1/2 cupfuls of sugar, 1 of sweet milk, 4 of sifted flour and 2 heaping teaspoonfuls of baking powder, the whites of 9 eggs. Mix the butter and sugar together thoroughly, then stir the milk in slowly. Add the eggs beaten to a froth, and then the flour and baking powder, stirring until well mixed. Flavor with vanilla. Put into the cake pan a layer of cake, then a layer of citron cut in thin strips. Alternate in this way until the cake sponge is all used.
ORANGE CUSTARD CAKE
1 cupful of sugar, 1 1/2 cupfuls of flour, 1/2 cupful of sweet milk, 1 tablespoonful of melted butter, 2 eggs, beaten separately, and 2 teaspoonfuls of baking powder. Bake in jelly tins. This will make 3 layers.
Custard - Beat together the juice and grated rind of 1 orange, 1 cupful pf sugar, 1 egg, 1 tablespoonful of corn-starch; put in a tin dish and set in a kettle of boiling water a few minutes; let it cool and spread between the cake layers.
FEDERAL CAKE
2 1/2 cupfuls of sugar, 1 of butter, 1 of sweet milk, 4 of sifted flour, 5 eggs, 1/2 teaspoonful of soda, 1 glassful of wine, 1 of brandy, 3 teaspoonfuls of cinnamon, 1 1/2 of cloves, 1 nutmeg and 1 lb. of raisins or currants, or a mixture of both.
WASHINGTON CAKE
1 cupful of sugar, 1 of flour, 4 eggs, butter the size of an egg, and 1 1/2 teaspoonfuls of baking powder. Bake in jelly tins. Filling - Grate 1 apple and 1/2 the rind of 1 lemon. Take the juice of 1 lemon, 1 cupful of sugar and 1 egg. Mix and put it on the stove, letting it remain until it comes to a boil. Spread between the layers while it is warm.
CREAM SPONGE CAKE
From Ramson's Family Receipt Book dated 1896. One cup of sugar, one cup of sifted flour, four eggs, four and one-half tablespoons of milk, two teaspoons of baking powder sifted with the flour, a little salt and lemon essence. Bake in jelly tins.
Cream - Pint of thick sweet cream sweetened and flavored with vanilla. Beat with an egg beater until very stiff. Spread between and on top of the layers of sponge cake.
RICE CAKE
Put on a small cup of rice to boil in one pint of cold water. When cooked, and it is as stiff as can be stirred, turn out in a bowl, salt, and add one small cup of sugar, one teaspoonful of vanilla and a little grated lemon rind. When cool, add the beaten yolks of three eggs and stir together. Butter a small dripping pan and strew with sifted bread crumbs. Put in the rice and smooth over the top; pour over a tablespoonful of melted butter, then sift on sugar a quarter of an inch deep. Put in the oven till a fine brown. Eat with whipped cream.
SOUTHERN FRUIT CAKE - From 1902 Woman's Favorite Cookbook - originally a plantation recipe
One cupful each of butter, sugar and molasses, one-half cupful of sour cream, three cupfuls of flour, three eggs, yolks and whites beaten separately, one teaspoonful of cinnamon, one-half teaspoonful each of cloves and allspice, and one-fourth of a nutmeg, grated, one-half pint of seeded raisins, one-half cup of currants, one-half teaspoonful of soda. Mix in order named; dissolve soda in one tablespoonful of hot water and add last. Bake in slow oven. Delicious.
SCRIPTURE CAKE - Mrs. Cynthia Pullman, published in 1902
Four and one-half cups of I Kings 4:28 flour; one and one-half cups of Judges 5:25, butter, L.C.; two cups of Jeremiah 6:20, sugar; two cups of I Samuel 30:12, raisins; two cups of Nahum 3:12, figs; one cup of Numbers 17:8, almonds; two tablespoonfuls of I Samuel 14:25, honey; season to taste with II Chronicles 9:9, spices; six of Jeremiah 17:11, eggs; a pinch of Leviticus, salt; one and one-half cups of Judges 4:19, milk, L.C.; two teaspoonfuls of Amos 4:5, baking-powder. Follow Solomon's prescription for making a good boy by Proverbs 23:14 - "thou shall beat him well with a rod" - and you will have a good cake.
LEMON CAKE Rumford Complete Cook Book 1908
2 scant cups sugar, 1/2 cup butter, 3 eggs, 1 cup milk, 2 rounding teaspoons baking powder, grated rind of 1 lemon, 3 cups flour.
Beat the butter with half the sugar; add gradually the remainder of the sugar together with the well-beaten eggs. Next, put in the grated lemon, then the milk, and lastly the flour sifted with the salt and baking powder. Bake about forty minutes in a moderate oven, and cover with lemon frosting.
SNOW CAKE Rumford Complete CookBook 1908
1/4 cup butter, 1 cup sugar, 1/2 teaspoon vanilla, 2 egg whites, 1 1/2 cups flour, 1 1/2 level teaspoons baking powder, 1/2 cup milk.
Cream the butter, add gradually the sugar and vanilla. Beat the egg-whites to a stiff froth and add. Mix and sift the flour and baking powder and add to the first mixture alternately with the milk. Bake ina moderate oven forty-five minutes. Cover with boiled frosting.
